All you need to do is cut the top off the pumpkin, clean out the innards and seeds (reserve those), then microwave or bake your egg in it. Super simple, festive, and the kidlets as well as the adults will love the unique presentation, while you can revel in the fact that you don't have those dishes to wash up.
Ingredients
1 mini pumpkin per serving
1-2 eggs per serving
1 dollop of butter per serving
Salt and pepper or seasoning (to taste)
Directions:
Cut and Remove the top of the pumpkin about 1" down from the stem. With a sturdy spoon, scoop out the innards and seeds and any remaining stringy pulp.
Microwave Method:
Place a dollop of butter in the bottom of the pumpkin shell. Break one or two eggs into the pumpkin shell and season to taste. Set the pumpkin in a microwave or oven proof bowl with a little water. Place in the microwave and cook about 1 minute or until the egg white is solid. A little longer if you want the yolk cooked. Remove from the microwave (carefully, this is hot), remove the plastic wrap. Serve while hot with cinnamon rolls, toast and melted cheese if desired.
Oven method: Place the pumpkins in an oven proof baking pan with a little water. Bake at 375 degrees for 8-10 minutes or until the egg white is solid. A little longer if you prefer the egg yolk fully cooked.
