Chicken salad is always a refreshing salad and can easily be made with left over chicken, whether it is fried, baked, grilled or rotisserie chicken. The addition of some vegetables and healthy pro-biotics will assure a filling and appealing quick meal.
Servings: 2
INGREDIENTS
Sweet Pepper
1-2 Cups cut up chicken breast (or left over chicken or canned)
1/2 Cup Mayonaise (prepared or homemade)
1/4 C. Plain Yogurt (prepared or homemade)
1- 2 ribs celery (reserve leafy tops for garnish)
2 T. grated carrot
1/4 C. grated cheese
1/2 tsp. garlic seasoning
1 tsp. Parsley
1 tsp. Chives
Prepare the pepper: Cut off the top and remove the innards. Reserve the top. Cut small eyes, nose, mouth as a Jack o Lantern. Set aside. (You may need to cut off a little from the bottom for the pepper to sit straight--not too much we don't want the contents falling out the bottom).
Prepare the Mayonnaise, yogurt, seasoning, parsley and chives. Stir together to fully incorporate.
Mix the chicken with the vegetables and cheese until fully incorporated. Stir the dressing in with the chicken mixture.
Stuff each sweet pepper with the chicken salad mixture, so it shows through the jack o lantern features. Garnish with the leafy tops of the celery. Top with the *lid* of the pumpkin. Serve with garlic bread or crackers or Pumpkin chips*. Serve to the kidlets before they head out to trick or treat for a nourishing, enticing and quick meal on a busy night.

Note: I found the pumpkin chips under the brand name *Harvest of Good Eatin'*. They are mildly flavored with a bit of cinnamon.
