I have been making this omelet at least the past 20 years. and it always turns out great on those campouts. This is one of those comfort foods that is simple to make with whatever ingredients you prefer and especially suitable for camping and can be made up ahead of time so you only have to heat the water. The beauty is that you can make up individual omelets, with any ingredients to please everyone in the crowd and have the omelets ready all at the same time. Use a large kettle to make several at a time. A little story about this omelet is that I told bro how to make it some ten years ago, and he jumped right on it and proceeded to make the omelet. Well he tells me after the fact that he had used a kettle a bit small, and the bag hung over the edge, which of course then the bag begin melting and smoke filled the kitchen. So, after this little episode, this recipe comes with a warning. Use a kettle large enough to accomodate the bags AND do not allow them to hang over the edge of the kettle whether in the kitchen or out camping. I've seen recent posts on popular FB recipe pages, for a new and sensational recipe, however this is not new and even the method is not new. I originally posted this 3 years ago on our FB page.
INDIVIDIAL SERVING:
2 Eggs
1/2 C. grated cheese
tomato (quartered and diced)
Pinch salt and pepper (or to taste)
Pinch Garlic powder
1-2 T. Cream
Place the eggs in a 1 quart plastic zip bag, add the cream and seasoning. Close the bag, and squish or shake to incorporate. Add the tomato, and cheese and vegetables or meats of your choice. Place the closed bag in a kettle of boiling water, be sure it is not touching the sides or hanging out of the kettle if cooking over fire. Lift the bag up and down a few times to cook evenly. This will take anywhere from 5-10 minutes. Just lift the bag out of the hot water, open and slip the contents out onto a plate. Garnish with a little parsley or chives and slice of tomato. Serve with English muffins toasted on the grill.
NOTE: To make larger omelets use the Gallon size zip bags, just double or triple the ingredients and allow more cooking time.
Preparation Suggestions: Spinach, Diced onion, Cooked Sausage, chopped Ham or Bacon added to the basic ingredients or any meats and vegetables of your choice, just grate or cut up fine and add to the mixture.
