1 Large Grilled Chicken Breast (shredded)
4 Cups Cooked Mini Shell Pasta (Equals about 2 cups uncooked)
4 Boiled eggs (Peeled sliced or diced)
1/4 Cup Italian Dressing + a tad more to marinate the shredded chicken
1/2 Cup Mayonnaise
1/2 Cup Cheese (grated)
Pinch of Paprika (Garnish)
Fresh Chives (chopped) (Garnish
Using two forks, back to back, shred the cooked meat until finely shredded. Pour about 2 T. Italian dressing over the meat and toss until fully incorporated. Prepare the eggs, cheese and Pasta. Mix the Dressing and Mayonnaise together until creamy without lumps. In a medium bowl, mix the pasta, eggs, cheese and dressing mixture together to incorporate. Add the marinated meat and toss together with the pasta. Top with sliced boiled egg, a dash of paprika and fresh chopped chives.
NOTE: This can be a stand alone Salad with a slice of garlic bread, or crackers or served as a side dish. Great for potlucks and picnics.
