I love Shrimp Scampi, but shrimp is expensive, so the next best thing? Chicken Scampi of course.
This recipe is quick and easy and will be on the table within a 1/2 hour, start to finish.
Serves 2-4

2 Large Skinless-Boneless chicken breasts
1 cube butter (1/2 cup) (divided)
Sliced dried garlic (or fresh)
SEASONING MIX
4 full T. grated Romano and Parmesan mix (or plain Parmesan cheese)
3 tsp. Garlic Powder
1 T. parsley
Trim any fat from the chicken breasts. Cut into bite size pieces. Melt 2 T. butter in a large cast iron skillet. Add the sliced garlic, stirring it into the butter. Add the chicken pieces and brown on one side then turn over. Lower the heat to simmer 8-10 minutes until thoroughly cooked through. Add the seasoning mix and another T. Butter. Stir the chicken pieces coating all pieces with seasoning. Melt the final T. butter in a small serving dish for dipping if desired.
Serving Suggestion: Serve with Sweet Rice* and clarified butter (ghee)*. Garnish with Parsley and Chives flower heads for your gourmet presentation. This can be served on a bed of noodles if desired, Just add the cooked pasta to the skillet to dredge in the garlic butter before serving, for added flavor.
NOTE: This has plenty of flavor however you may wish to add salt and pepper to taste.
