Cut up Chicken parts
2 CUPS HOME CANNED APRICOT JAM (or Peach)
1/4 CUP CRUSHED PINEAPPLE ( WITH JUICE)
1/2 CUP HONEY BBQ SAUCE (More or less to your taste)
Mix jam, pineapple and bbq sauce well, spoon over 3-5 pounds of chicken parts, reserving enough to use for dipping. Allow to slow cook 6 hours on low heat or in a slow cooker.
Place chicken parts in slow cooker on high for 3-4 hours. Spoon the Apricot BBQ mixture over the chicken. Continue on low for 4 hours. Periodically turning the chicken pieces to make sure all pieces get covered with the sauce. Scoop some of the sauce over the pieces just before serving.
Easy summer-time recipe, without heating up the kitchen. This same sauce can be used for grilling, by slathering it on the meat in the last 15 minutes of cooking.
