Supplies Needed"
Vodka (80 proof or higher)
Small jar or bottle with tight fitting lid (4 oz. works for me)
Almonds
Jar funnel
Use clean, sterilized jars or bottles. If using whole almonds be sure to run them through a food chopper so there is surface area for the vodka to penetrate. If using slivered almonds, you can crush some for additional surface. Fill the jar half way with the prepared almonds, then top off the jar to within 1/2 inch with the vodka. Shake or rotate the jar side to side to make sure the liquor gets in and around all the nuts. Cape the jar with a tight fitting lid and store in the pantry, shaking or rotating the jar each day for up to 2 months. Strain into a clean sterilized jar or bottle. If making this for gift giving allow yourself at least two months prior to the occasion to make sure the extract is ready. Label, decorate with ribbon or jute.
Note: Other liquor can be used, such as Rum, Everclear, Gin. Almond extract is a clear extract so the liquor you use should be a clear, rather than Bourbon or Brandy. The important thing is to purchase at least 80 proof liquor. The higher the proof, the better the extract.
Caution: Keep all extracts out of the reach of children. Extracts are intended for cooking, baking or adding to adult beverages only.

Try adding a bit of homemade lemon extract to my Hot buttered Lemon beverage or my Lemon Curd. You may also like to try additional extracts for use in baking or beverages.
