Rather than use the standard mayonnaise, mustard and relish, I used my Lemon Cheese. Use it the same as you would mayonnaise or your favorite mixture for deviled eggs.
The ratio of Lemon cheese to hard egg yolks is 6 yolks to about 2-3 T. Lemon Cheese. Adjust to your own favorite consistency. I added no additional seasoning, and just allowed the flavors of the lemon cheese and egg yolks to blend, however you may wish to add your own favorite seasoning to taste.
Deviled Eggs I
2-3 T. Plain Lemon Cheese (See Recipe Link Below)
6 Hard boiled egg Yolks
A pinch or two Fresh Chopped Herbs
Garnish with a pinch of Paprika
Slice the hard boiled eggs in half lengthwise. Remove the yolks. Mix with Lemon Cheese, fresh chopped herbs and season to taste. Garnish with a pinch of Paprika.
Deviled Eggs II
Savory Lemon Cheese (see recipe link below)
Yolks
1 T. Sun dried tomatoes (in oil-drained), diced
Garnish with slice of sun dried tomato
Slice the hard boiled eggs in half lengthwise and remove the yolks. Mix the yolks with Lemon cheese and diced sun dried tomatoes. Season to taste.
Deviled Eggs III
Eggs sliced in half lengthwise, yolks removed and reserved
Savory Lemon Cheese (see recipe link below)
Cucumber (diced and blotted dry)
Fresh chopped Herbs (garnish)
Mix the yolks with the savory lemon cheese, chopped cucumber.
Top with chopped chives or parsley
(Note: This version does not use the egg yolk, however feel free to mix it in if desired. If not using the egg yolks they can be reserved for egg salad or salad topping if desired.)
Serving suggestion: Make a variety for the appetizer platter. These are also suitable to stuff mini sweet peppers and celery. Or use any of the egg mixtures for egg salad or as an egg dip for raw vegetables and chips or crackers.
TIP: You can pipe these or a melon baller works well for filling the egg white halves.
