4-6 Chicken breasts (skinless/ boneless)
1 can Carbonated beverage (7 up-Club Soda-Sparkling water etc.)
2 Fresh Tomatoes (diced)
1/2 onion (diced)
1 T. Taco seasoning (to taste)
1/2 tsp. smoked paprika
1-2 cups grated cheese (your choice, I use medium cheddar or colby)
1 can olives (sliced)
Sweet or Hot pepper (diced) optional
Sour cream
Guacamole (optional)
Salsa* (Refer to my Peach Salsa recipe/see link below)
Tortilla chips
Place the chicken breasts in a large bowl or sealable container. Pour soda over all the meat and turn a few times to make sure they are completely coated. Refrigerate covered overnight, turning the meat periodically to make sure all meat is marinated.
Place the chicken breast and marinade liquid in a slow cooker on high 2 hours. Turn to low for 4 hours.
When the meat is thoroughly cooked through, place in a bowl to shred the meat, leaving some larger pieces. Shredding the meat can be done with two meat forks or table forks, pulling the meat apart. Add Taco seasoning and toss to mix with the shredded meat until thoroughly incorporated. *Remove the larger pieces back to the slow cooker. (reserve the remaining larger pieces of meat for my Chicken Tortilla Soup/see link below). Prepare the cheese, onions, tomatoes and olives. On a large oven proof platter, or oven proof casserole dish, layer tortilla chips, grated cheese, diced tomatoes, diced onions, sliced olives and seasoned chicken. Top with more cheese. Set in the oven at 400 degrees to melt the cheese.
To Serve: Add sliced olives to the top, hot pepper if desired. Serve sour cream and Guacamole for dipping. This can be made on individual serving plates with individual portions of sour cream, salsa and guacamole.
