One of my fondest childhood memories was the rare times we had a cold treat during the summer months. I love chocolate, so my choice was Fudgesicles. I've intended to make them for a long time, and it happened I had all the ingredients at the same time to make my version of fudgesicles.
2 C. Heavy Cream
1/2 cup grated milk chocolate (block chocolate)
1/2 cup grated dark chocolate (block chocolate)
1 T. grated Cone brown Sugar
Heat the Cream to near boiling in the microwave or in a saucepan on the stove. (Do not boil). Remove from the heat and whisk or use an immersion blender to mix in the grated chocolate and sugar. Allow to cool 10 minutes and pour into Popsicle molds. Place in the freezer for 1-2 hours to partially set, then insert Popsicle sticks and return to the freezer 4-6 hours or until frozen solid.
NOTE: If you prefer one chocolate over the other, adjust portions to suit taste. This can be made with all dark or all milk chocolate if preferred or a different ratio than I used. You can use chocolate chips if preferred. The Cone brown sugar is in solid form and requires grating, however you can use regular brown sugar or Turbinado sugar. Adjust sweetness to your own taste. These are just mildly sweet, but not overly sweet as per my recipe.
