Apples go hand in hand with pork. In this case I had a little pork left over from a pork shoulder roast, and an apple that needed to be used up, so what better way to do it than to combine the two. And as always I have a "twist" to my recipe. I used honey BBQ sauce for the seasoning.
INGREDIENTS
2 cups diced, cooked pork
1 apple (chopped)
4 potatoes (cubed)
1/2 cup rice
1/2 cup Honey Barbeque Sauce
Seasoning of choice if desired
DIRECTIONS
Cover the pork and pork bone with water. Simmer for stock. Wash and cut up the potatoes and apples with peels. Add the potatoes, apple, 1/2 cup rice and 1/2 cup BBQ sauce (diluted with water). Allow to simmer until the rice, potatoes and apple are cooked and softened.
