4-5 medium Tomatoes (quartered)
1/2 head Cauliflower
1 Small Squash (hubbard or butternut) Cut up in 2" pieces
1 Small Onion
2 large Potatoes (Cut in 2" pieces)
2-3 Cups Broth (chicken or vegetable)
1 Cup Heavy Cream
1 T. Garlic blend Seasoning
Salt and Pepper to taste
Parsley
Paprika
Wash and prepare the vegetables (of choice) then place in the slow cooker with broth. Set the temperature on high for 2 hours, stirring occasionally. Turn the temperature down on low for 4 hours or until vegetables are soft. Blend vegetable mixture with an emersion blender or food blender (be very careful of splashes this is hot). Blend until there are small chunks of vegetables, but not a full puree'. Add seasoning (to taste) and heavy cream, mixing again with the emersion blender. Ladle into bowls and garnish with dried parsley and paprika. Serve with Homemade bread or Garlic bread.
NOTE: For off grid, just mash with a potato masher until the vegetables are reduced to small chunks, while some are fully mashed.
NOTE: Any combination of your favorite vegetables will work for this and is a great recipe for end of season vegetables. Always season to taste.
NOTE: If you need to thicken, make a slurry of cornstarch and some of the broth, heat until thickened to your liking. If you need thinner, add a little milk until consistency is to your liking.
NOTE: This recipe is a way to get kidlets to eat vegetables that they may not like when prepared in other ways.

Garlic-Parmesan Seasoning

1 T. grated parmesan cheese
1 T. Garlic Powder
1/4 tsp. Thyme
1/4 tsp. Parsley
pinch of ground Sea Salt
Mix ingredients together and funnel into spice jars with tight fitting lids. Label and store in cupboard.
USES: Mix with butter for bread, sprinkle in soup or on skillet potatoes.
