Serves 2
3 Cups ground poultry meat (or ground meat of choice)
3 Eggs
1/4 Cup poultry stuffing mix
1/4 tsp poultry seasoning (optional if using pre-seasoned stuffing mix)
1/4 tsp salt (to taste)
Grated cheese (optional)
Cookie or Biscuit cutter
Mix the ground meat with stuffing, and seasonings. Roll into a ball. Place on cast iron grill and flatten out slightly. Cut out the center with a cookie or biscuit cutter in desired shape. Par-Cook the patty on one side, break the egg into the cut out center and allow to cook until the white begins to become solid. Carefully turn the patty to cook the other side. Top with grated cheese if desired. Serve with toast, home canned fruit or this will also make a great breakfast sandwich when you're on the go or camping.
