Prepare the pasta the way you normally do, just until tender. Mine is boiled in just enough water to cover, with a pinch of salt added to the boiling water. I used 2 1/2 cups dry pasta to about 6 cups water and boil about 10-15 minutes until just tender. Each of the dressings offers a different version to mix into the cooked pasta and offers flavor to the otherwise plain and ordinary pasta salad. And you'll have people wondering what the secret ingredient is.
Serving Size: One Large Bowl (6-8 individual servings)
PASTA DRESSING #1
1/2 Cup Mayonnaise
3 T. Zesty Italian dressing
Mix together until smooth, mix thoroughly into cooked and cooled pasta.
PASTA DRESSING #2
1/2 Cup Mayonnaise
2 T. Ranch Dressing
2 T. Sweet Relish
Mix together until smooth. Mix thoroughly into cooked and cooled pasta.
PASTA DRESSING #3
1/2 Cup Mayonnaise
1 tsp. Prepared Mustard
2 T. Sweet Relish
Mix together until smooth. Mix thoroughly into cooked and cooled pasta.
SUGGESTIONS: Mix chopped boiled egg into the pasta. Top with sliced boiled egg and a sprinkle of smoked paprika and chives if desired. Refrigerate to marinate the flavors. For larger salads increase the ingredients for the dressing desired.
NOTE: Each of these dressings work well as sandwich spreads and in potato salad for a little different presentation.
NOTE: I do nothing special when I boil eggs. Just make sure they are not fresh laid, start in cold water and bring to a boil. Boil 7-10 minutes on a low boil. Drain off the hot water and run cold tap water over the eggs to cool. Peel or refrigerate until ready to peel. The shells should slip right off without gouges or tears.
