6-8 large Tomatoes (cut in wedges)
4-6 C. Chicken Broth* (or enough to cover the tomatoes)
1/2 Onion (diced)
2- sprigs Fresh Basil (chopped-about 2 T.)
2-4 Garlic Cloves (minced) (adjust to taste)
Sprig fresh Oregano (chopped)
Sprig fresh Thyme (chopped)
Small Bunch Fresh Chives Chopped
Sprig of Fresh Parsley
4 pieces of crisp fried bacon (chopped)
Grated Cheese
1 T. Butter
Salt and Pepper to taste (may omit one or both)
Roast the Tomatoes until the edges are dark brown. (Broil or grill). Sear the Garlic Cloves, and caramelize the onions. Wash the herbs and shake the water off. Strip the herbs from the stem. Place all ingredients into the Slow Cooker on High, 2 hours, low 2-4 hours until soft to the fork. Add Salt and Pepper to taste if desired.
Serving Suggestion: Top with Crisp Bacon bits, Seasoned Bread
Crumbs, Chives, and Grated Cheese to serve if desired.
Note: If you prefer a smoother Tomato soup, use your immersion blender or Food blender to puree to your preferred consistency, mine was just blended enough to still have some texture, not a complete puree.
