Serves 4
Ingredients
4-6 Large Tomatoes ( Cut in wedges--oven Roasted)
4-6 C. Beef Broth (or enough to cover the tomato mixture)
2 Cups Cut Ziti
1/4 C Fresh Basil
1 Sprig Fresh Oregano
1 Sprig Fresh Thyme
1/2 Onion (sliced thin-Caramelized)
4-Garlic Cloves (Minced)
2 T. Herbed Butter*
1/2 C. Mozzarella Cheese (grated)
Salt and Pepper (to taste)
Directions
Roast the tomato wedges in the oven under the broiler until the edges are browned. Heat a cast iron skillet, add the herbed butter, onion and garlic, saute until caramelized and browned. Place the tomatoes, onions, garlic, herbs and broth in the slow cooker on high for 2 hours. With the immersion blender, blend the tomato mixture until a semi-smooth texture. Add salt and pepper to taste. Add the Ziti and continue to cook on low until the Ziti is tender (about 2 hours). Ladle into bowls and top with shredded cheese.
Serving suggestion: This can be a main dish or side dish. Served with a garden fresh salad and herb bread if desired.
