Serves 2
Dinner Franks (or Sausage)
1/2 medium Tomato (diced)
1 Small Ripe Sweet Pepper (sliced)
1 medium Carrot (peeled and grated)
2 C. Sauerkraut (well drained)
1/2 sliced onion (grilled or caramelized)
Prepare the vegetables. Mix the vegetables (except the onion) and kraut together. Heat together in a cast Iron frying pan, with scant amount of oil, just until heated through. Grill the sausage and onions. Top the sausage with the Sauerkraut mixture.
Serving Suggestion: You can put this in a bun and add your favorite condiments to the basic ingredients. You can make the sauerkraut mixture as a stand alone salad or use it in Reuben sandwiches, as a side dish with chicken or pork loin.
