Serves 4-6
Sauce Ingredients:
1 small potato (diced)
1 small onion (diced)
1 Quart jar Canned Tomatoes (about 2 large cans)
1 can Tomato paste
1 tsp. Garlic Parsley seasoning (to taste)
Salt and Pepper (to taste)
2 Chicken Breasts (cut in bite size pieces)
1/2 Pkg. Spaghetti
Grated Parmesan Cheese (optional)
Directions:
Sauce
Prepare the potato, onion and chicken meat. Saute the onion and potato in a skillet with a dollop of butter, until caramelized and lightly browned. Add the chicken and lightly brown. Add the tomatoes, tomato paste and seasoning. Simmer until most of the liquid cooks down, and the chicken is tender (about 20 minutes).
Spaghetti
Bring water to boil with a pinch of salt. Add the Spaghetti, boil until just tender (about 15 minutes). Drain.
Place cooked Spaghetti on a plate, top with the Chicken Tomato Sauce and sprinkle with Parmesan cheese.
Serving Suggestion: Serve with a fresh garden salad, topped with Homemade Basil flavored Mayonnaise*, if desired.
