Ingredients:
2 Cups Cooked Long Grain White Rice
1 Can Pineapple chunks or crushed (drained)
1 Can Fruit Cocktail or Tropical Fruit
1 Small jar Maraschino cherries (cut in half or quarters--reserve a few whole ones)
1 Sliced Banana (optional)
3 Cups Heavy Whipping Cream (or non dairy whipped topping)
Directions:
Toss the rice, chopped cherries, fruit cocktail and pineapple chunks with a fork. Whip the cream to stiff peaks. Stir in the Whipped cream or non dairy whipped topping. Keep chilled until ready to serve. Garnish with whole Cherries.
Serving Suggestion: Serve in individual dishes. This can double for a light dessert.
Tip: You can use Fruit Cocktail or Tropical Fruit cocktail in place of the Pineapple and cherries.
NOTE: If rice is off the menu, scientific studies have suggested soaking the rice at least 30 minutes, drain then rinse, before cooking. I have also read that adding a tablespoon of Coconut oil to rice while cooking helps to balance the starches so they are more digestible. Be sure to do your own research and consult your health care professional before following any suggestions found on the internet, for your own safety and your own health needs.
