Ingredients:
2 C. Frozen Strawberries (reserve one or two for sliced garnish)
2 C. Plain Yogurt (With live bacteria for probiotic benefits)*
2 tsp. Coconut Palm Sugar (or sugar to taste)
Angel Food Cake Loaf (or shortcake or pound cake)
Whipped Topping (if desired)
Directions:
Using your mini blender, kitchen blender or food processor, chop the strawberries coarsely. Mix half the strawberries with the yogurt. Spread half of the strawberry yogurt mixture into an 8 inch pie tin or freezer safe dish. Cut up the cake in small bite size pieces. Spread the other half of the strawberries (sweetened if you prefer), over the yogurt mix. Top with a dollop of plain yogurt, garnish with sliced strawberries. Cover and freeze until firm. Slice into pie shapes or scoop into a short wine glass. Top with whip cream if desired or a dollop of plain yogurt and garnish with sliced strawberries. Serve immediately or keep frozen until ready to serve.
Tip: To remove the frozen yogurt pie from the mold, set in a deep dish of warm water to release.
