Free-stone peaches are best for freezing or canned in halves or sliced. Free-stone literally means that the pit is easily removed from the flesh of the fruit. Those peaches that do not have a free or loose pit are best eaten from hand, made into jam or used in baking since they are difficult to remove the pit without mashing or mangling the fruit.
Peaches are one of the easiest fruits to can, or freeze, and my easy instructions will help with removing the skin, without loss of fruit from peeling with a knife or potato peeler. Be sure to reserve those peels for making Peach Peel Syrup, so there will be virtually no waste as you process your peaches.
