These bars are always a hit at potlucks and special gatherings . I also like to provide them with coffee in the mornings. They're so moist and delicious that wherever I take them, they don't last long. You can add chopped nuts, chocolate chips or coconut if desired. For the most flavor use very ripe bananas that I call *Leopard* bananas, you know the ones with the spots on them, that's a sign that the bananas are perfect for use in baking. Those bananas are also the most healthy for you. Yes, I know everyone turns their nose up when they see the spots or the skin browning, but they have no clue you are using those for the baked goods that they devour. I offer you a choice of two different frostings, but these are good with or without a topping.
Yield: About 3 dozen bars
Ingredients
⦁ 1/2 cup butter, softened
⦁ 1/2 cup granulated sugar
⦁ 1/2 c. Brown Sugar (packed)
⦁ 3 eggs (room, temperature beaten)
⦁ 2 cups mashed leopard bananas (about 4 medium)
⦁ 1 teaspoon maple extract
⦁ 2 cups all-purpose flour
⦁ 1 teaspoon baking soda
⦁Pinch salt
FROSTING:
- Coconut Brown Sugar Topping
Ingredients:
1 C. brown sugar
1/2 C. melted butter
5 T. thick cream
1- 1 1/2 C. shredded Coconut (may omit)
Directions:
Mix ingredients together. Spread on the warm cake. Place in the oven under the broiler until it begins to bubble. Remove immediately.
Serve warm or cooled, with or without ice cream
OR
2. Cream Cheese Frosting
⦁ 1 package (8 ounces) cream cheese, softened
⦁ 1/4 cup butter, softened
⦁ 1 T. Cream
⦁ 4 cups confectioners' sugar
⦁ 2 teaspoons maple extract
For frosting, in a small bowl, beat cream cheese, cream and butter until fluffy. Add confectioners' sugar and extract a little at a time; beat until smooth.
Directions
1. In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs, bananas and maple extract. Combine the flour, baking soda and salt; stir into creamed mixture just until blended.
2. Transfer to a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack.
