Makes-6 popsicles
Ingredients:
2 C. Frozen Strawberries (reserve one or two for sliced garnish)
2 C. Plain Yogurt (With live bacteria for probiotic benefits)*
2 tsp. Coconut Palm Sugar (or preferred sweetener: to taste)
Angel Food Cake Loaf (or shortcake or pound cake)
Directions:
With your mini blender, kitchen blender or food processor, chop the frozen strawberries coarsely. Layer the frozen strawberries into the bottom of each mold, pressing down firmly. Cut up the cake into bite size pieces. Add the cake pieces on top of the strawberries, firmly pressing into the strawberry. Mix half of the strawberries with the yogurt. Add this layer to the mold on top of the cake bites, again press down firmly. Top with more of the chopped strawberries (sweetened if desired). Place the popsicle stick into the center and freeze until solid (about 5 hours).
Note: To remove the Pops from the mold run warm water over the mold and remove the popsicle.
Tip: For those on sugar free diets, the coconut palm sugar is a tasty alternative to other sugar substitutes.
