What says summer better than a slice of watermelon? Watermelon is a weight watchers dream, but dressed up it can be dessert, appetizer, beverage chiller and makes a statement on the picnic table no matter how it's served.

Seedless Watermelon (sliced and cut in wedges)
Yogurt (any flavor)
Cupcake sprinkles (optional)
Slice the watermelon and cut in wedges. Fill a deep dish with yogurt, then dip the pointed ends of the watermelon into the yogurt until well coated. With a knife, carefully cut a slit in the rind end, insert popsicle stick. Add a dash of cupcake sprinkles if desired. Set on a freezer safe dish, cover with plastic wrap and freeze.

Star-shaped Cookie Cutter
Slice the melon no thicker than the depth of the cookie cutter. Insert the cookie cutter to cut through the melon slice. Serve cold, or freeze, adding a toothpick in the center for a chilly, fruity and healthy appetizer. Or add a few frozen melon stars to your favorite summertime beverage.

We've all heard of Watermelon Wine. Well, mine isn't the original version, but it is Watermelon Wine.
Bottle (White Wine or Sparkling Water)
Seedless Watermelon
Blueberries
Cookie Cutter
Slice watermelon no thicker than the depth of the cookie cutter. Slice blueberries in half. Freeze the watermelon and the blueberries. Pour chilled wine into a chilled pitcher. Add the watermelon and blueberries. The fruit adds a touch of flavor and serves to keep the wine cold. Serve in your favorite summer wine glasses. Add a wedge of watermelon to the rim for a festive summer beverage. For non-alcohol version, use club soda or ginger ale in lieu of the wine. Or simply fill a pitcher with ice cold water and add the frozen watermelon and blueberries.

Vanilla or Plain Yogurt (thick, Greek style)
Popsicle molds
Cut the rind from watermelon slices, cut up the watermelon in small chunks. Run the watermelon through the blender or food processor until pureed. Fill one third of the popsicle mold with plain or vanilla yogurt (or flavor of choice). Fill the next 1/3 of the popsicle mold with pureed blueberries. Add the pureed melon (drain through a fine strainer if too watery) to final one third of the popsicle mold. Insert popsicle stick. Freeze. A simple, healthy summertime fun pop, for barbeque's, family gatherings and celebrations.

Whipped Cream
Graham Cracker (prepared like a crust)
Cookie Cutter
Pack prepared graham cracker crust firmly in the bottom of a mason jar or mug. Spoon Yogurt into the jar, add whipped cream, layer blueberries, strawberry syrup, yogurt, whipped cream. Top with Whipped Cream. Chill in the refrigerator until serving time. Garnish with Blueberries and Watermelon cookie cut out or melon wedge. Add an Ice Tea Spoon.
SUMMERTIME FRUITCAKE

Seedless Watermelon
Plain or Vanilla yogurt (or flavor choice)
Whipped Cream (optional)
Assorted Fruit
Slice watermelon in 1-2 inch thick rounds. Quickly spread yogurt over one round of watermelon, (thickly applied works best.) Add a layer of assorted fruit. Gently place the other round of watermelon on top. Place in the refrigerator until thoroughly chilled. Remove just before serving. With whipped cream or Yogurt, decorate the top and add more fruit of choice. Garnish with prepared assorted fresh fruit and mint sprigs or Lemon Verbena sprigs. Serve chilled.
WATERMELON FRUIT MOLD

Blueberries
1 box flavored gelatin (your flavor choice or unflavored)
Plain or Vanilla Yogurt
Prepare gelatin as directed on the box. Pour into mold, and refrigerate. Allow to partially set. Stir in 1/2 cup yogurt ,watermelon, blueberry or other fresh fruit, cut in small bite-size pieces. Return to the refrigerator to fully set. To serve, set mold in warm water and slide out onto serving plate. Garnish with fresh fruit cubes and slices and a dollop of yogurt.
Be sure to save the watermelon rinds and blemished fruit for the chickens. They love it. And for a hot weather treat freeze those and give to the chickens to help them cool off.
