Instructions:
1 C. Sweet Potato Hummus
1 C. Flour (white, whole wheat, alternative flour such as chickpea, or your preference)
Dollop of Butter (for the griddle or cast iron skillet)
Directions:
Flour the work surface and add flour to the hummus, work the flour through the hummus and knead until all the flour is incorporated and the dough is not sticky. This should be a soft workable dough, so do not add more flour unless it is needed to prevent sticking and if so a tiny bit at a time. Roll into a ball, then pull off golf ball size pieces. Roll each piece into a ball, then flatten with the palm of your hand, or roll out with a rolling pin to about 1/8 inch thick.
Heat the griddle and melt the butter. When the griddle is hot, place the flattened dough on the griddle, turn when the flat bread begins to brown (about 2 minutes). Brown both sides, about 2 minutes each side or until done. Fry the remaining flattened dough. These can be eaten hot from the griddle or room temperature.
Suggested Uses: Wraps, tacos, as a substitute for bread slathered with your favorite toppings, as dippers in your favorite sauce.
